As with all pyrazines this is used in traces – Ketine at 0.1% in DPG is pleasantly chocolatey, burnt and roasted.
According to Arctander the main use of this material was to scent the packets and enhance the flavour of potato crisps / chips. It is also useful as part of a chocolate or coffee accord and other gourmand types.
It is present in the scent of coffee and chocolate but also some types of lavender, beer and pork. It also has a green-grass aspect that can add depth to green scents, in high dilution.
