Powerful and very jammy, this crystalline solid has a lovel raspberry-jam, deep character that can be easily pushed in the direction of other fruits when used in combination with other materials.
It also works well as a sweetening agent.
Arctander says: āThis ketone is used in perfume compositions, particularly in Jasmin, Gardenia, Tuberose, etc. where floral notes need fruity undertones, or where fruity notes need fixation and supporting delicate sweetness.
One known Jasmin speciality contains a considerable proportion of this material in its āfruit- preserve-likeā undertones and terminal notes.āĀ
Jean Claude Elena, in his bookĀ Diary of a Nose, suggests that in combination withĀ beta-IononeĀ and fructone this material can produce an effective illusion of the smell of raspberries. Ā He saysĀ āUnlike cherries, which have more taste than smell, raspberries are all about smell … Adding cis-3-hexenol gives a sour, green quality, while geraniol will give a taste of lipstick.āĀ
